Mediterranean Chicken :: Gluten-Free

Mediterranean Chicken :: Gluten-Free :: Alaina Ann Another quick and easy {gluten-free} favorite in my kitchen! I am generous with the garlic, basil, oregano and parsley. Feel free to tone each down to your liking. I usually serve the Mediterranean chicken over basmati rice, with garlic green beans.

Mediterranean Chicken {Gluten-Free}

1 lb chicken tenderloins, cut into cubes olive oil 4 garlic cloves, minced 14.5 oz diced tomatoes 1 tsp oregano 1 tsp parsley 1 tsp basil feta cheese (optional) kalamata olives, chopped (optional)

  1. Coat large, shallow pan with olive oil over medium/high heat. Add garlic and cook until garlic begins to brown.
  2. Add chicken and cook until chicken is cooked through {approximately 8 minutes}.
  3. Add diced tomatoes, oregano, parsley and basil. Stir together and change to medium/low heat.
  4. Stir and cook for another 10-15 minutes. Remove from heat and let cool for 5 minutes.
  5. Top with feta cheese and kalamata olives, if you choose.
